Delicious Lemon Cupcakes
This batch of cupcakes have the perfect lemony flavour and taste so good that you won't be able to put them down. And BONUS: they don't even need icing to make them delicious. This is because the recipe incorporates both the zest and the juice of the lemons to give the cupcakes an ultimate lemon flavour. They are not as sweet as the store-bought cupcakes, but I assure you that your taste buds will be just as delighted.
Time: 1 hour or less (including baking time)
Ingredients:
125g unsalted butter (chopped up)
125g self raising flour
115g caster sugar
1/4 tsp of baking soda/bicarbonate of soda
the zest of 2 lemons
1 and 1/2 tbsp of lemon juice (the juice of approx. 1/3 lemon)
2 eggs
Method:
1. Place the chunks of butter, caster sugar and the lemon zest in a mixing bowl.
2. Mix those 3 ingredients until smooth and well combined.
3. Add the eggs to the mixture one after the other, mixing well in between.
4. Gradually add the flour to the mixture on a low speed.
5. Add the lemon juice and mix for approx. 20 sec.
6. The mixture should be smooth and silky at this stage.
7. Line a cupcake tray with cupcake cases.
8. Fill the cupcake cases with the batter until 3/4 full. (there should be enough batter for 12 cupcakes)
9. Bake the cupcakes in a 170ºC oven for 18-22 minutes.
10. Poke a skewer or chopstick into the center of a cupcake to check if the cupcakes are fully cooked.
*(the skewer should come out free of crumbs)
