Magdalenas

Hi everyone, I was learning about Spanish culture and food in school and decided to try these Spanish cupcakes out. It was my first time making these but they still taste great.

These cupcakes taste like lemon, a classic cake flavour, so don't be fooled if you aren't familiar with Spanish cuisine. Trust me, they are very easy to make and taste delicious, you won't regret trying them out.

Time: 30 minutes

 

Ingredients

  • 4 eggs

  • 225g of granulated sugar (1 cup)

  • 115g of butter

  • 1 + 2/3 cup of flour

  • 1 tbsp of baking powder

  • 1 tbsp of milk

  • zest from 1 lemon (optional)

 

Method

1. Preheat the oven to 200˚C (375˚F).

2. Measure 55g (1/4 cup) of sugar and set it aside to be used later.

3. Mix the eggs and the sugar that was not put aside (the 170g sugar), and beat until it is well mixed.

4. Melt the butter in a sauce pan, or in the microwave, until it is smooth and doesn't have any lumps in it.

5. Make sure the butter cools down and isn't bubbling. Pour the melted butter in the egg mixture, bit by bit, while continuing to beat the mixture.

6. Next add the flour, baking powder and milk to the mixture. Beat until it is well mixed, firmer and thicker.

7. [Optional] Zest the lemon, and add the zest into the mixture.

8. Place paper cupcake liners onto a cupcake pan, or on a oven sheet, and place it in the middle of the oven for 18-20 minutes, until the magdalenas have turned a golden brown colour.

9. Sprinkle some of the sugar that was set aside on top of the cupcakes while they're still hot, so that the sugar can melt on top.
